I'm puzzled about the food turkey. During Christmas and Thanksgiving people are very excited to be cooking?

and eating turkey. But they almost never cook turkey at any other time. If turkey was such an exciting, delicious food why wouldn't it be cooked all year round in the same way that chicken is?
